Yes it’s safe to use. It absorbs moisture. But when you put it on food, it is an acidic food so when it sits on it, it starts to destroy any enzymes and enzymes can break down the food even further. You can’t buy a saffron substitute or take it to school.

This is a guest post by James Denton. He is a PhD candidate at the University of Bristol, UK. He is working on a postgraduate project at the University of Sussex examining the impact of a new generation of ‘sustainable agriculture’ and sustainable food production on social and ecological health.

Sustainable agriculture often seems to be about making something from bits of dirt and rocks and the environment; a ‘no-hand-outs approach’. However, this is not the case as much as some campaigners appear to believe. If anything, we need to focus more on making things that have a long-term sustainability impact. By this I mean products that have either a tangible effect on the environment through the provision of new goods or services or that have a positive impact on the society. My research aims to investigate this aspect by analysing the impact of various different types of food production on ecological health, social well-being and wellbeing and how we can best design food systems that will contribute to their sustainability.

In my doctoral research I will work on three projects. The first is a project about the sustainability of animal agriculture, to investigate how to reduce waste and the overall costs of production as a result of livestock production to minimise their environmental impact. The second project is a comparative analysis of two ‘sustainable agriculture’ systems, the ‘pink revolution’ to compare the effect of a plant-based diet on the health of individuals, and the ‘green revolution’ to compare the impact of plant-based diets to that of a high carbohydrate and high fat diet. The third project will be looking at how to design more ecologically friendly food systems to improve the life of individuals in the modern world (both physical and psychological). This project will be investigating the impact that different diets have on health and wellbeing.

The two research projects are being undertaken with funding from the National Center for Biotechnology Information (NCBI) and the UK Natural Environment Research Council (NERC). These bodies
