If one looks at the growth of saffron production, the growth is evident on many fronts. India accounts for 40-45% of saffron exports.

The country’s highest selling saffron species, saffron variegata with a maximum market value of $2,050 or about $1,300 per ton, has seen the greatest growth in exports in the past couple of years.

However, the growth is not uniform across industries. For instance, there has been a significant drop in the percentage of exported saffron products due to falling global demand over the past decade.

One of the main sources of export growth has been the growing demand for saffron in the Asian region, which has been driving up exports in the last few years.

The World Wide Trade Statistics (WTTS) in its 2016 Annual Survey of International Trade in Agricultural Products report states that over the last 20 years, growth in Indian exports of saffron, its major export commodity in the country, has been relatively steady, at between 15% and 20%.

India is also the largest producer of yellow varieties of saffron – the yellow saffron variety – with 4% share of the total Indian saffron exports at $3.6 billion in 2013. Currently, India is the largest producer of yellow saffron in the world.
