The colour of saffron varies from year to year in the Middle East, sometimes in such a way as to make it appear red. Black saffron’s strength can also be a problem when being used in the heart. “Black saffron’s smell can cause people to break out in hives, which is a bad thing,” says David Fenton, a perfumer who specialises in perfumes and liqueurs from around the world. “People would be far better off with white and red, because that’s the colour associated with peace, peace of mind, and happiness.” For these reasons, some people believe saffron should be considered a luxury.
