Saffron is a plant, so there are some side effects to taking high levels of it.
One of the most common concerns about saffron consumption is skin irritation. That is not really a side effect to think about, the reason we know about this is that the skin is not sensitive, saffron simply irritates the skin and can therefore cause it to be red, irritated or break out.
However, as far as the physical side effects are concerned, saffron is a known irritant if consumed in the body in large amounts.

Saffron contains high levels of lignans. Lignans have been known to cause many types of eye problems including conjunctivitis (red eyes), inflammation of the cornea and glaucoma (damage to retina). They also can cause allergic reactions to certain foods. In particular, saffron contains saffron extract, saffron protein, saffron water, saffron oil, and saffron fiber and also may contain lignans from other plants of the mustard family.
The other most common concern about saffron consumption is a risk of developing cardiovascular disorders such as cardiovascular dysrhythmia, arrhythmia, and the other cardiovascular conditions discussed in this article.
Another risk of saffron absorption being increased is possible kidney damage. The kidneys have many enzymes in them which are needed for all of the body’s functions. One of these is called uric acid catabolism enzymes which are involved in breaking down the water and other nutrients in foods and drinks, and they become sensitive to acidic foods and beverages.
Saffron can also cause the kidneys to shut down making your kidneys work harder to remove waste products rather than allowing them to run at a higher rate which reduces renal function, which contributes to the risk of kidney disease. You will often notice a decrease in urination if you are taking saffron.
Another concern, is a possible increase in the risk of kidney stones.
