On the surface, it may seem like a tough proposition, especially since companies are looking to cut costs.

“Saffron doesn’t sell for the margins found elsewhere in the global food supply chain,” said Eric Rishe, a senior fellow at Carnegie Mellon University’s Eberly College of Business. “For some companies, sourcing products from Saffron-certified suppliers may be an easy road to profitability, but for others, these products are simply too costly to use.”

A growing number of smaller, locally owned restaurants are looking to Saffron for its healthy ingredients, or what has been dubbed a “Healthy Foods Gap.”

Many are doing so to avoid paying U.S. import duties—up to 2.6 percent, which is the highest on the list.

Another option is to purchase local ingredients. Although it’s true most Americans don’t recognize Saffron as a real food, research shows foodies tend to prefer it.

“Saffron actually comes from India, so that lends itself to a variety of local flavor profiles,” said Dr. James Davis, the cofounder of Dr. Davis’s Market, a restaurant in the Los Angeles area that sells Saffron.

Dr. Davis’s Market sells a wide range of foods that include salads, baked goods and sandwiches prepared with herbs, fruits, greens and spices.

The food products Dr. Davis’s Market makes use of include seeds, including the seeds from Saffron, which are grown by farmers and then sold fresh in retail outlets.

“The idea that people are eating a vegetable that isn’t really a vegetable is kind of crazy,” said Daniela Mottola, vice president of marketing for Boca Chica Foods, a South Florida based Saffron producer.

Even if food companies are looking at sourcing Saffron for nutritional value or quality, it doesn’t mean they are looking to make a profit on the commodity. As of the end of 2014, Saffron sold for $6.99 per pound.

Most food production is subsidized by taxpayers.

“Food and agriculture are very difficult and expensive areas that the American taxpayer doesn’t think they can finance,” Davis said.

In fact, the Department of Agriculture estimates that Americans contribute $2.3 trillion to the food supply each year, with about 73 percent of that going toward subsidies for agriculture.
